Empanadas recipe

 

This truly is one of my family’s favorite recipes.  Empanadas are so delicious and one of my favorite foods.  Whenever I make these they don’t last long.  They are the perfect combination of crunchy flaky goodness, yet still soft and gooey.

This recipe tastes incredibly authentic! Whenever I make these for friends, they can’t believe I don’t have a Spanish background.LOL.  This is a quick and simple recipe that anyone can make!

 

Beef Empanadas

 

Ingredients:

1 teaspoon olive oil

1/2 lb of ground beef

1/2 onion (chopped)

6 olives, sliced thin (optional)

2 tbsp of Goya Sofrito

1 packet of  Goya Sazón with coriander and annatto

1 teaspoon of minced garlic

1/2 teaspoon of oregano

1 package of Goya discos (yellow or white), thawed

Oil for frying ( I use vegetable)

 

Directions:

  1. Heat oil and cook beef until browned.  Add onions and cook until soft.  Stir in garlic, olives, sofrito, Sazón, and oregano.  Lower heat to low and let mixture simmer until thickens about 10 minutes.
  2. On a floured surface, roll out discos with a rolling-pin.  Spoon 1 to 2 tablespoons in the middle and fold in half.  Moisten edges with a little bit of water to pinch and seal.  Use a fork to seal around the edges.
  3. Fill a saucepan with oil and heat over medium-high heat.  Cook them in batches and fry until light brown on both sides, flipping once every 2-3 minutes.  Place on a plate with paper towels to drain.

*All of these items are easily found at your local grocery store.  The discos are in the freezer section and other seasonings are in the same isle as all Goya products, taco ingredients, etc.

Yes! They are really good with chicken! Just dice it small and cook like normal before adding seasonings 🙂
